Merlin has been bartending since the 90′s and this has taken him to all corners of the world. Shaking and stirring cocktails mainly through Euroupe and Australasia, “I love tequlia and chartreuse, someone has to look after the problem children of the spirit world”. Many passport pages and cheese experiences led Nick Haddow to tiny wee Bruny Island in the mighty state of tasmania. A fleet, yes a fleet, of stunning cheeses are now produced by Bruny Island Cheese Co. One of them happens to be the TREMENDOUS C2.
Named after the tank it was conceived in , C2 is a raw milk, alpine cheese that deserves your full attaention. Firm texture with spots of calcites and a complexity so mad and left field that if your wife left you I just don’t think that you would notice. Fact, mine left me and two other men and still couldn’t care less.
